Totally new to FreeBSD

PCBSD or FreeSBie. Both good places to start. They come with all sorts of
things pre-installed, like GUIs etc.

Other than that, I'd say 6.x is the right way to go for all the funky
desktop toys, if you're determined to put yourself through the agony of
doing it all yourself.
