MUA's (ie, mutt, or elm, or pine) tend to deliver mail by doing
something like:

mike at lindt:~$ /usr/sbin/sendmail -oi -t -odq << EOF
> From: <mike at urgle.com>
> To: <mike at urgle.com>
> Subject: Weebles wobble but they don't fall down.

> Wobble... thud 
> EOF
mike at lindt:~$ 

Fetchmail (I think) by default delivers mail by connecting to
localhost on port 25.
